Ras Malai Recipe | How to Make Easy and Soft Ras Malai at Home

Ras Malai is a royal Indian dessert made with soft paneer patties soaked in rich saffron and cardamom flavored milk. This easy homemade recipe will help you prepare spongy and delicious Ras Malai step by step.

Ingredients
  

For Chhena (Paneer)
  • 1 liter full cream milk
  • 2 tbsp lemon juice or vinegar
  • Cold water for washing chhena
For Sugar Syrup
  • 2 cups water
  • 1 cup sugar
For Rabri (Milk Syrup)
  • 1 liter full cream milk
  • ½ cup sugar
  • 3–4 cardamom pods powdered
  • Few saffron strands optional
  • 2 tbsp chopped dry fruits almonds, pistachios, cashews

Equipment

  • Heavy-bottom pan
  • Muslin cloth or cotton cloth
  • Wide pan with lid
  • Strainer
  • Bowl

Method
 

Step 1: Make Paneer
  1. Boil milk in a big pan.
  2. Add lemon juice or vinegar. Stir until milk splits.
  3. Strain with a cloth and wash with cold water.
  4. Squeeze water and hang for 30 minutes.
  5. Knead paneer for 8–10 minutes till smooth.
  6. Make small balls and press flat.
Step 2: Cook in Sugar Syrup
  1. Boil water and sugar in a wide pan.
  2. Add paneer balls.
  3. Cover and cook 12–15 minutes till they double in size.
  4. Take out and cool.
Step 3: Make Milk Syrup
  1. Boil milk and cook till half.
  2. Add sugar, cardamom, and saffron.
  3. Add chopped nuts.
Step 4: Mix and Serve
  1. Press paneer balls to remove extra syrup.
  2. Put them in the milk syrup.
  3. Chill for 2–3 hours before serving.

Notes

  • Use full-cream milk for soft paneer.
  • Knead well for smooth balls.
  • Do not overcook in sugar water.
  • Always serve Ras Malai cold.
